Easy Cooking: Mozzarella Diet Salad

Quitting smoking about fourteen months ago was a big change in my daily lifestyle.

A huge impact on my psychology, emotions and food habits.

Τhe more I was missing it, the more I was eating and picking at mezes and sweets, souvlaki, pizzas and basically, all I could find to distract me from my bad need. I wasn`t doing that on purpose, I guess it was just a normal reaction to that change that my body was experiencing.

So, yes, I got rid of this nasty habit BUT, I managed to gain ten pounds in a year and that! in my height, is a really large -literally- size change.

Well, one day I just had enough with all that, I was missing my old lifestyle and clothes. I realised that it was the time for the next step and I decided to consult an expert, a clinical dietician.

For about two months now, I follow a healthy diet and I am really happy with the results. I even added more exercise in my daily routine which is something I was missing so much!

This is my last`s night lunch and I find it super easy and tasty to make. Mozzarella cheese is one of the low-fat options one can have on a diet and I prefer to use it in all my salad dishes. I find it really light and tasty and it helps me to wake up all light and happy.

-plus the colours are fantastic. aren`t they?

 

the ingredients

  • lettuce
  • 1 tomato
  • 1 medium size cucumber
  • 60 gr. mozzarella
  • olive oil
  • 2 small nuts or one slice of brown bread
  • tuna -optional and only one can of about 150 gr

 

the method

  • chop the vegetables & mozzarella in small pieces
  • mix them in a large bowl
  • pour over about two large spoons of olive oil
  • add the nuts or bread

Did you notice any salt on the recipe?

A little tip of  the diet is that I don’t use non cooked salt at all. It helps a lot if you easily fell swelled.
